Instructions
  1. Add oil to a large pot, over medium heat.
  2. Stir in flour. Cook, stirring constantly, until flour begins to turn golden brown.
  3. Slowly add the chicken broth, stirring constantly with a whisk, and cook for 2 minutes. The mixture should not be lumpy.
  4. Add all ingredients except okra. Bring to a boil, then reduce heat and let simmer for 20 to 30 minutes.
  5. Add okra, and let cook for 15 to 20 more minutes.
  6. Remove bay leaf.
  7. Serve hot in a bowl or over rice.

  1. Put 2 cups of tomato juice and all other ingredients except diced tomato, chives, and lemon wedges in a blender.
  2. Puree.
  3. Slowly add the remaining 2 cups of tomato juice to pureed mixture. Add diced tomato. Chill.
  4. Serve icy cold in individual bowls garnished with chives and lemon wedges.

  1. In a large stock pot, combine water, annato, bay leaf, ½ chopped onion, green pepper, and ½ teaspoon of mint. Bring to a boil.
  2. Meanwhile, prepare the meatballs: In a bowl, combine chicken and beef, the other half chopped onion, tomato, oregano, corn flour, pepper, garlic, and salt. Mix well. Form into 1-inch meatballs. Place meatballs in boiling water and lower heat. Cook over low heat for 30 to 45 minutes.
  3. Add carrots, chayote, cabbage, and celery. Cook over low heat for 25 minutes. Add corn and zucchini and cook for another 5 minutes.
  4. Serve warm, garnished with cilantro and the rest of the mint.

  1. Place the garlic cloves into a small saucepan and add enough water (about ½ cup) to cover them.
  2. Bring water to a boil, then reduce heat and simmer until garlic is tender, about 15 minutes.
  3. Reduce the liquid to 2 tablespoons and increase the heat for 3 minutes.
  4. Pour the contents into a small sieve over a glass or stainless steel bowl, and with a wooden spoon, mash the garlic through the sieve into the bowl.
  5. Whisk the vinegar into the garlic mixture; then incorporate the oil and seasonings, and mix thoroughly.
  6. Let stand for 30 minutes to let the flavors meld. Give the dressing a good whisk immediately before serving.

  1. Mix together black pepper, salt, and flour. Coat chicken breasts with seasoned flour.
  2. In a large skillet, heat the olive oil. Place chicken breasts in the skillet and brown on both sides. Then remove chicken from skillet and set aside.
  3. To the skillet, add wine and stir until the wine is heated. Add lemon juice, chicken stock, and mushrooms. Stir to toss, reduce heat, and cook for about 10 minutes, until the sauce is partially reduced.
  4. Return the browned chicken breasts to the skillet. Spoon the sauce over the chicken, then cover and cook for about 5-10 minutes or until chicken is done.
  5. Serve sauce over chicken. Garnish with chopped parsley.

  1. Spray a large nonstick skillet with cooking spray. Preheat over high heat.
  2. Add turkey; cook, stirring occasionally, for 5 minutes. Drain fat and discard.
  3. Stir in tomatoes with their juice, green pepper, onion, garlic, oregano, and black pepper. Bring to a boil; reduce heat. Simmer covered for 15 minutes, stirring occasionally. Remove cover; simmer for 15 minutes more. (If you prefer a creamier sauce, give sauce a whirl in your blender or food processor.)
  4. Meanwhile, cook spaghetti in unsalted water. Drain well.
  5. Serve sauce over spaghetti.

  1. Rinse and core the cabbage. Carefully remove 10 outer leaves, place them in a saucepan, and cover with water. Bring to a boil, and simmer for 5 minutes. Remove and drain cooked cabbage leaves on paper towels.
  2. Shred ½ cup of the raw cabbage, and set aside.
  3. Brown ground turkey, ground beef, and minced onion in a skillet. Drain off the fat.
  4. Combine meat mixture, bread crumbs, ¼ cup water, and black pepper in a mixing bowl. Drain the tomatoes, reserving liquid, and add ½ cup of the liquid to the meat mixture (set aside the tomatoes). Mix well.
  5. To assemble cabbage rolls: Place ¼ cup filling near the edge of each cooked cabbage leaf. Roll up the leaf, tucking in the sides to keep the filling inside. Place folded side down in a large skillet; arrange cabbage rolls side-by-side.
  6. On top of the assembled cabbage rolls, add tomatoes, sliced onion, 1 cup water, shredded cabbage, and carrot. Cover and simmer about 1 hour (or until cabbage is tender), basting occasionally.
  7. Remove the cabbage rolls to a serving platter, and keep warm.
  8. Mix lemon juice, brown sugar, and cornstarch together in a small bowl. Add to the vegetables and liquid in the skillet and cook, stirring occasionally, until thickened and clear. Serve over cabbage rolls.
