Sweet Potato Custard
Instructions
  1. Preheat oven to 325 °F. Spray a 1-quart casserole with nonstick cooking spray.
  2. In a medium bowl, stir together sweet potato and banana. Add milk, blending well.
  3. Add brown sugar, egg yolks, and salt, and mix thoroughly.
  4. Transfer sweet potato mixture to casserole dish.
  5. Combine raisins, sugar, and cinnamon; sprinkle over the top of the sweet potato mixture.
  6. Bake for 40 to 45 minutes, or until a knife inserted near the center comes out clean.

  1. In a large pot, brown chicken pieces in oil.
  2. Add water, tomatoes, green and red peppers, celery, carrot, corn, onion, cilantro, garlic, salt, and black pepper. Cover and cook over medium heat for 20 to 30 minutes, or until chicken is done.
  3. Remove chicken from the pot and place in the refrigerator. Add rice, peas, and olives to the pot. Cover pot and cook over low heat for about 20 minutes, until rice is cooked.
  4. Add chicken and raisins, and cook for another 8 minutes. Serve.

  1. In a 4-quart saucepan over medium heat, cook and stir couscous, olive oil, walnuts, salt, pepper, and spice just until couscous begins to brown.
  2. Slowly add water, then raisins and carrots.  Cover.  Bring to a boil over high heat.
  3. Remove from the heat, and let stand for 10 minutes.
  4. Fluff with a fork.  Serve immediately.

Instructions
  1. Combine the yogurt, curry powder, garlic, salt and ground red pepper in a  medium bowl. Mix well. Place chicken into mixture and stir until coated on all  sides
  2. Add in the red pepper, scallions, celery, and raisins. Mix well. Refrigerate for a  couple hours to allow all the flavors to combine.
  3. Just before serving, stir in the peanuts.
  4. Serve inside a whole wheat pita or tortilla or on a bed of lettuce
